This week we have a hearty bean burger recipe that will leave you full and satisfied whether or not you are a vegetarian! We made a fiesta night of it, and trust us, these burgers go great with some guacamole, pico de gallo and, of course, margaritas. This rec-ipe makes four to five burgers. We recommend doubling it and making a bulk batch since they freeze well and you can heat them up in a pan later when you need a quick fix!
1 can black beans
••• onion, chopped
3 cloves garlic, chopped
1 tbsp chili powder
1 tbsp cumin
2 tbsp green chiles, chopped
Salt and pepper to taste
••• cup breadcrumbs
1 egg
1. Preheat oven to 375 degrees.
2. Drain black beans and place into a medium mixing bowl. Mash
the beans with a fork until smooth with some
larger bean pieces.
3. Add all ingredients but breadcrumbs and egg,
mixing well.
4. Add egg and breadcrumbs. Mix until
well-bound.
5. Form mixture into bean patties.
6. Place patties on a well-oiled baking
sheet, then bake for 10-12 minutes on
each side.
