For this week’s recipe, we decided to go with a sweet treat. After a long week of suffering from what we like to call “second week syndrome” and being busy morning, noon and night, we felt we deserved a little dessert. You do, too. Forgot how to write a paper over that summer break? Take a 15 minute breather and make these quick and easy cookies. It may not make you more productive, but it will be delicious.
••• cup granulated sugar
••• cup packed brown sugar
••• cup margarine or butter, softened
••• cup shortening (you can substitute
butter or margarine in a pinch!)
••• tsp baking soda
••• tsp cinnamon
••• tsp vanilla
••• tsp baking powder
••• tsp salt
••• cup rolled oats
1 cup flour
1 cup nuts/chocolate chips/raisins
1. Preheat your oven to 375 degrees.
2. In a mixing bowl, stir together all of your dry ingredients.
3. Throw in your softened butter and your shortening, crack that egg and add the vanilla.
Using a large spoon, stir everything together until well incorporated.
4. If you’re feeling nutty, go ahead and stir in a cup of chopped walnuts. If you’re feeling
sad, go with the chocolate.
5. Bake for about ten minutes.
Healthy options! To be a little bit healthier, we used whole grain flour. You can do all whole grain, or go half and half. If you want to be extra super healthy, you can also add a tablespoon of flax seed for every cup of flour. It’s one of those hip “super foods” with Omega-3 fatty acids, antioxidants and nutrition benefits that may help prevent health issues, from heart disease to breast cancer. The best part is that you can’t even taste the difference!
