The Best Lemon Bars
SERVES: 10 people

EASY TIPS: You can add a layer of your favorite jam as a delicious twist to the classic lemon!
INGREDIENTS:
Shortbread Based Crust:
- 12 tablespoons butter, chopped
- 1 ⅓ cup of all purpose flour
- ¾ cup powdered sugar
- Pinch of salt
- Preheat the oven to 375. Butter a square pan.
- Combine ingredients for the crust in a bowl. It is okay if it is a bit crumbly.
- Add the shortbread dough into the prepared pan. Bake until golden brown and just set, between 15-20 minutes.
- Remove from the oven.
Lemon Filling:
- 3 tablespoons all purpose flour
- 2 tablespoons lemon zest
- 1 cup + 2 tablespoons granulated sugar
- ⅓ cup lemon juice
- ½ teaspoon baking powder
- Pinch of salt
- Alter the oven temperature to 350 to prevent burning of the filling.
- Combine filling ingredients in a bowl. Pour over the prepared crust.
- Bake until filling is just set, about 20 minutes.
- Let the bars cool completely and serve with powdered sugar.
