Marry Me Chicken Pasta is just as romantic as the name suggests, with a flavor profile reputed to be so irresistible that it could even inspire a marriage proposal upon being served. Whether you are planning a cozy date night with your significant other, a Galentine’s get together or simply treating yourself to something special, this dish is sure to impress without having to spend hours in the kitchen making a mess. Whether or not it leads to a proposal, one thing is for certain: this dish will definitely have everyone at the table falling in love.
Ingredients:
- ½ pound chicken breast
- ½ pound pasta of choice
- ¼ cup sun-dried tomatoes (plus oil), chopped
- 2 tablespoons butter
- 1 medium shallot, diced
- 2 teaspoons Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon chicken bouillon
- ½ teaspoon red pepper flakes
- 6 garlic cloves, chopped
- 2 tablespoons tomato paste
- Olive oil, plus more for cooking
- 2.5 cups chicken broth
- ½ cup heavy cream
- ½ grated parmesan cheese, plus more for serving
- 1 cup spinach
- Fresh basil, to taste
- Salt and pepper to taste
Directions:
- In a large saucepan, heat 1 tablespoon of the oil from the sun dried tomatoes and 1 tablespoon of butter over medium heat.
- Season chicken with a generous amount of salt and pepper, 1 teaspoon Italian seasoning, ½ teaspoon paprika and red pepper flakes to taste. Cook chicken until it is no longer pink in the middle and then set aside. When ready to serve, slice crosswise and serve atop the pasta.
- Reduce heat to low and add in another tablespoon of butter along with the shallot, 1 teaspoon Italian seasoning, ½ teaspoon paprika, ½ teaspoon red pepper flakes and ½ teaspoon chicken bouillon. Sauté for 2-3 minutes, then add in garlic cloves. Cook for another minute, then stir the tomato paste. Cook everything until it begins to caramelize (2-3 minutes).
- Pour in the chicken broth, scraping up any brown bits on the bottom of the pan. Bring to a simmer, add in your pasta and stir.
- Cover and simmer until pasta is al dente, about 10-15 minutes.
- Once the pasta is fully cooked, add in heavy cream, chopped sun-dried tomatoes and parmesan. Stir until fully combined.
- Add in spinach and basil. Stir to combine.
- To plate, place pasta on a plate and add chicken on top. Add fresh basil and a sprinkle of parmesan.
