The ‘Gate Plate: Not your average Ramen Noodles
SERVES: 2-5 people
PREP TIME: 20 minutes
COOK TIME: 15 minutes
EASY TIPS: For a more liquid or soupy consistency, feel free to add some chicken or vegetable stock to the sauce!
INGREDIENTS:
For the Noodles and Sauce:
- 1 box rice noodles
- ¼ cup soy sauce (for noodles)
- 2 tablespoons olive oil (for noodles)
- ¼ cup peanut butter
- ⅓ cup tahini
- ⅔ cup soy sauce
- ½ cup water
- ¼ cup chicken stock
- ¼ cup hoisin sauce
- 1 tablespoon sesame oil
- 1 tablespoon curry paste
- 4 scallions, chopped
- 4 cloves of garlic, chopped
- 1 shallot, chopped
- Salt & pepper
For toppings and protein:
- 1 rotisserie chicken, shredded
- Broccoli, chopped
- Hard boiled eggs, halved
- Bell pepper, chopped
- Avocado, chopped
- Sesame seeds
- Chopped scallions
- Chopped basil
- Chopped cilantro
- Extra soy sauce for topping
- Boil water and cook rice noodles according to the package. Rinse with cold water when finished cooking and add soy sauce or olive oil as you please.
- Combine peanut butter, tahini, soy sauce, water, chicken stock, hoisin sauce, sesame oil, curry paste, scallions, garlic, shallot, salt and pepper in a food processor. Pulse until smooth.
- Combine noodles and desired amount of sauce and put into a bowl. Top with desired toppings! Enjoy.
