RELAX WITH SOME RAMEN: This ramen noodle bowl is perfect for warming up as the snowy Hamilton winters begin.

SERVES: 2-5 people

PREP TIME: 20 minutes 

COOK TIME:  15 minutes

EASY TIPS: For a more liquid or soupy consistency, feel free to add some chicken or vegetable stock to the sauce!

INGREDIENTS

For the Noodles and Sauce:

  • 1 box rice noodles
  • ¼ cup soy sauce (for noodles)
  • 2 tablespoons olive oil (for noodles)
  • ¼ cup peanut butter
  • ⅓ cup tahini
  • ⅔ cup soy sauce
  • ½ cup water
  • ¼ cup chicken stock
  • ¼ cup hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon curry paste
  • 4 scallions, chopped
  • 4 cloves of garlic, chopped
  • 1 shallot, chopped
  • Salt & pepper

For toppings and protein:

  • 1 rotisserie chicken, shredded
  • Broccoli, chopped
  • Hard boiled eggs, halved
  • Bell pepper, chopped
  • Avocado, chopped
  • Sesame seeds
  • Chopped scallions
  • Chopped basil
  • Chopped cilantro
  • Extra soy sauce for topping
  1. Boil water and cook rice noodles according to the package. Rinse with cold water when finished cooking and add soy sauce or olive oil as you please.
  2. Combine peanut butter, tahini, soy sauce, water, chicken stock, hoisin sauce, sesame oil, curry paste, scallions, garlic, shallot, salt and pepper in a food processor. Pulse until smooth.
  3. Combine noodles and desired amount of sauce and put into a bowl. Top with desired toppings! Enjoy.
