One of the best things about this recipe is its flexibly – it can be dressed up, or made more simple! The spices and herbs added are great for flavor and can be substituted and swapped for your favorites. Feel free to add a protein to make it more of a hearty meal, or stick with it as an appetizer or snack.
Parmesan & Garlicky Tomato Bruschetta Bites
SERVES: 3-5 people
PREP TIME: 10 minutes
COOK TIME: 10 minutes
EASY TIPS: I made an extra batch of the tomato-garlic mixture and kept it to eat on top of a salad.
INGREDIENTS:
- 1 loaf of french bread
- 1 red onion, chopped
- 2 large tomatoes, chopped
- 2 tablespoons balsamic vinegar
- 4-6 tablespoons of olive oil
- 1 lemon, juice squeezed
- 4 tablespoons of fresh basil, chopped
- 3 cloves of garlic, chopped
- ½ tsp dried oregano
- Parmesan cheese
- Salt and pepper to taste
INSTRUCTIONS:
- Preheat the oven to 350°F.
- Slice the bread into thin slices. Drizzle with olive oil and bake for 8-10 minutes, or until crispy.
- Combine red onion, tomatoes, balsamic vinegar, olive oil, lemon juice, fresh basil, garlic, chopped, oregano, salt and pepper. Add extra lemon juice or balsamic vinegar to taste.
- Sprinkle cheese on the bread and let it crisp for 2-3 minutes extra.
- Remove bread from the oven and then add tomato mixture. Sprinkle additional basil, salt and pepper and enjoy!
