One of the best things about this recipe is its flexibly – it can be dressed up, or made more simple! The spices and herbs added are great for flavor and can be substituted and swapped for your favorites. Feel free to add a protein to make it more of a hearty meal, or stick with it as an appetizer or snack.

 

Parmesan & Garlicky Tomato Bruschetta Bites

 

SERVES: 3-5 people

PREP TIME: 10 minutes 

COOK TIME:  10 minutes

 

EASY TIPS: I made an extra batch of the tomato-garlic mixture and kept it to eat on top of a salad.

 

INGREDIENTS

  • 1 loaf of french bread
  • 1 red onion, chopped
  • 2 large tomatoes, chopped
  • 2 tablespoons balsamic vinegar
  • 4-6 tablespoons of olive oil
  • 1 lemon, juice squeezed
  • 4 tablespoons of fresh basil, chopped
  • 3 cloves of garlic, chopped
  • ½ tsp dried oregano
  • Parmesan cheese
  • Salt and pepper to taste

 

INSTRUCTIONS: 

  1. Preheat the oven to 350°F.
  2. Slice the bread into thin slices. Drizzle with olive oil and bake for 8-10 minutes, or until crispy.
  3. Combine red onion, tomatoes, balsamic vinegar, olive oil, lemon juice, fresh basil, garlic, chopped, oregano, salt and pepper. Add extra lemon juice or balsamic vinegar to taste.
  4. Sprinkle cheese on the bread and let it crisp for 2-3 minutes extra.
  5. Remove bread from the oven and then add tomato mixture. Sprinkle additional basil, salt and pepper and enjoy!
